Choosing your potato, essential before buying.

When you have a small garden, you choose the "early" ones, then the "late ones" and if you have space, the "mid-season ones", because the picking time for the latter coincides with a fairly low price on the market. market. Early, or new potatoes are of real financial interest.

For what use ? Depending on the cooking, in water, steam, frying, the variety changes. Do I prefer mash or fries? Be well informed before rushing to the merchant's crate. Potatoes are firm, tender or mealy.

The third criterion which is also to be taken into account is the resistance to downy mildew , that damn fungus that can bring down an entire culture. But also watch out for the "mildew resistant" label on the crate, because that's a lie by omission; is it leaf and/or tuber blight? Again, you have to look for the information.

And then there's your taste! If you find a potato you like, keep it. The taste quality of a potato depends on the soil, and its cultivation (compost, ash... clayey, sandy soil... moderate, intense watering...)

My choice this year:Allians, Chérie, Charlotte, Nicolas, Agata... We'll have to push the walls...
